Tasting notes
Goodnight I block, Arabian pear pirouettes, sapote saltwater taffy, harmonizing with the bees, lemon rind step ladder, vinyl crackle
Harvested October 10th, 2023. Fermented with native yeasts and aged in 50% new French Oak by Tonnellerie Sud-Ouest for 7 months. She then spent her final elevage in once filled French oak for 10 months. Bottled unfined and unfiltered.
